Oyster Mushrooms

Oysters (Pleurotus) are a commonly grown gourmet mushroom with over 40 known wild strains.

Although each may have its own taste profile they are all high in protein, vitamins, minerals, antioxidants and a source of fiber. Oysters mushrooms are also low in calories and carbohydrates, fat free, cholesterol and a gluten free food source.

Hericium

Although their flavors are slightly ‘mushroomy’ they are all beautiful, delicious, delicate and have a wonderful seafood / crab flavor and texture that can easily be substituted for seafood.

Hericium, in which there are 26 varieties, are most commonly known as Lions Mane; due to it's appearance. Although they are high in vitamins and minerals they also contain specific compounds which are believed to help with multiple health benefits such as enhancing brain function, boosting your immune system and assisting in controlling high blood sugar levels, to name a few. This explains the reason for which they have been used in Asian medicine for centuries.

Speckled Chestnuts

Nutty, Earthy flavor, caps are dense and meaty, while their stems literally 'snap' even after cooking.

These delish shrooms compliment any dish and are very popular in Potato Leek soup, as well as Hot Pot and Ramen soups.
